The 3 Fountains Plum Belle de Louvain Blend No. 9 is the slow maceration of hand-picked whole (baking) plums on traditional lambic. Without added juices, syrups or sweeteners. Unfiltered. Unpasteurized.
"This Pruim features the Belle De Louvain, an ancient plum variety, popularly known in Brabant and Limburg province as Paterskloten and Hondskloten respectively. We sourced both these at Hoenshof in Limburg and at Willy's orchard on the Wijngaardberg around Rotselaar. We macerated the entire plums for almost five months on lambic from five different barrels and five different brews. Finally, we blended with some young lambik before bottling. Final fruit intensity is 380 grams of Belle De Louvain plums per liter of Pruim. 100% 3 Fonteinen."

The Brasserie Cantillon Cuvee Saint-Gilloise Lambic is not a traditional gueuze, in the sense that it is made from 2-year-old lambic, without the addition of young lambic. Liquid saccharose is added to make the refermentation in the bottle possible. In addition, she is also dry-hopped.
Like all other beers from the Cantillon brewery, the Cuvée Saint-Gilloise can be stored for a very long time, but as with all hopped beers, we recommend not waiting too long to preserve the floral hop notes.
