Undergoing a generous dry-hop with Mosaic, Idaho7, Citra, and Galaxy hops, it results in citrusy aromas and flavors reminiscent of orange peel, grapefruit, and pine resin. The IPA, or India Pale Ale, has a long history. It originated in England, as a variation on the Pale Ale. A Pale Ale at that time was 'lighter' in color than other beers. This was due to innovations in malt kilning. They were more able to control the temperature of the kilning, so that the malt no longer became very dark. By using a lighter malt you get completely different flavors in the beer. The tones became lighter and fresher, unlike the very dark brown and black beers of this period. Legend has it that the beers shipped to India had a higher alcohol content and more hops were added to the brew. This was done to ensure that the beers survived the journey. This is said to have resulted in the term India Pale Ale, or IPA.
