De gemiddelde leeftijd van de lambiek komt uit op 31 maanden, met een fruitintensiteit van 437 gram per liter. 90% van de lambiek komt voort uit granen die lokaal zijn geteeld.

bottling date: 25/02/2020 For this Druif, we used Muscat Bleu grapes from Wijndomein Hoenshof in Hoepertingen, Haspengouw region, Flanders. Muscat Bleu is a hybrid wine and table grape and has its origins in Switzerland. We macerated the grape must with four different lambics from two different barrels. We let it macerate for five months and blended the grape lambic with another three young lambics prior to bottling. The final fruit intensity is 38.1% of grape must per liter of Grape Muscat Bleu. 100% 3 Fountains.

The 3 Fonteinen Oude Geuze Golden Blend Honey (season 20/21) Blend 35 is a blend of 1.5 year old and 4 year old lambic, but with 33% 4 year old lambic (instead of the normal 25%). During brewing, honey from our own bee council has been added.

"This Golden Blend is assembled with lambics from three different barrels and five different brews. The lambics were brewed by three different breweries. It is one of the first blends in which we use lambic, brewed by Brouwerij De Troch in Wambeek. At the beginning of 2016, the oldest lambic brewed.
3 Fonteinen Oude Geuze Golden Blend is an assembly of from one to (at least 25%) four-year-old lambic. Spontaneously mistaken. Matured in oak barrels. Long storage in bottle. Unfiltered. Unpasteurized."

Deze lambiek is gedurende 4 maanden gemacereerd met Wijnbergperzikken. De lambiek is 3 en 4 jaar oud, waarbij twee derde is gebrouwen door 3 Fonteinen, en een derde gebrouwen door Lindemans. In totaal is er 388 gram perzikken per liter lambiek gebruikt.

De 3 Fonteinen X Harth+Harth Druif Sylvaner (22/23) Blend 42 is gemacereerd met Sylvaner druiven afkomstig van Harth+Harth, gedurende 4 maanden. Hiervoor zijn 2 en 3 jaar oude lambieken gebruikt, waardoor de gemiddelde leeftijd uitkomt op 26 maanden. De uiteindelijke fruitintensiteit van 584 gram druiven per liter. Bijna 80% van de granen gebruikt voor het bier is lokaal geteeld.

De Boon Geuze Mariage Parfait is a selection of softer lambic, where 95% of the beer is at least 3 years old, and 5% consists of young lambic.
The bottle date of the beer can be found by subtracting 20 years from the 'best before' date. An ideal Gueuze to mature for a number of years. Develops nicely over the years.

Brasserie Cantillon Cuvee Saint-Gilloise - Lambic Gueuze / 5% vol / 75 cl.
The Brasserie Cantillon Cuvee Saint-Gilloise Lambic is not a traditional gueuze, in the sense that it is made from 2-year-old lambic, without the addition of young lambic. Liquid saccharose is added to make the refermentation in the bottle possible. In addition, she is also dry-hopped.
Like all other beers from the Cantillon brewery, the Cuvée Saint-Gilloise can be stored for a very long time, but as with all hopped beers, we recommend not waiting too long to preserve the floral hop notes.
